Analysis of Imidazole Dipeptides (NH2P-50 4E)

The imidazole dipeptides, anserine (dipeptide of histidine and β-alanine) and carnosine (dipeptide of 1-methylhistidine and β-alanine), are found in large concentrations in the meat of bonito, tuna, whale, and the breast meat of birds.
